As with every new year, my resolution is to eat healthier. While I do try to stick to it throughout the year, sometimes I fall off the wagon by February. The problem is, is that I love hearty and comfort food.
In this recipe, I roasted the vegetables to give it a hearty feel, tossed with a fresh green salad. I love to roast vegetables. They develop this nice caramel-y flavor that's so comforting. Here, i've re-created a salad that I tried while wedding dress shopping with my sister. There's butternut squash, beets, and kale. So healthy!
