Nothing hits the spot like Breakfast. It's that cliche'd important meal of the day, right? Well I decided to take full advantage and recreate a Breakfast classic - a spin on the Sausage Egg McMuffin! Check out the recipe and video below to find out how I put it all together, and added my special childhood ingredient!

- 1 tablespoon of unsalted butter
- 1 brioche bun (or bread of your choice)
- 1 breakfast sausage link
- 1 slice of cheese (I'm using Havarti)
- 1 egg
- sliced heirloom tomatoes.
Slice and butter the bread and set it aside. Take the sausage link and open up the casing by slicing it down the middle. Then take the meat out and form it into a small patty about the same size and shape as the bread.
Next, take a heavy skillet and put it on the stove on medium heat. Add some olive oil and let the pan get hot but not smoking. Then toast your bread with the butter side down for about a minute until it gets that light and golden brown color. Take your bread off and then add your sausage patty and press it down with a spatula to flatten it. Cook it on both sides until it's golden brown, about 2 minutes on each side. Put the cheese on top and let it melt for about 30 seconds, and then transfer it to a plate with paper towel on it to drain.
Now fry the egg in the fat remaining from the skillet and cook until the whites are set but the yolk is still soft. This will take about 2 to 2 and a half minutes.
Now to layer the sandwich: Start with the sausage and cheese patty, and then add in the toppings like sliced tomatoes or arugula. Then carefully top it off with the fried egg Season with salt and pepper and possibly add ketchup.
