I've recently been turned on to Coconut Milk. And maybe that's because it has been popping up everywhere - lattes, egg nog, lotion, etc, there are coconut products everywhere. And it's great that there are more milk alternatives. I love it because of its unique aroma. But still the Coconut Milk products on the shelves of grocery stores can be pretty processed, full of stabilizers and preservatives. So this video (below) shows how to make it homemade, without any of that.
Coconut Rice really takes advantage of the flavor and healthy fats from the homemade Coconut Milk. Eating it brings back college memories where I'd frequent a local Malaysian restaurant near school. Here's a really simple recipe:
