Homemade Taco Night

As we move into Fall I've been continually re-inspired by the Seasonal produce available. In turn I've been more motivated to attempt more fresh dishes so this week I made little corn Tortillas (I was so excited to get my cast-iron tortilla press in the mail) with homemade Chipotle Carnitas, a Cilantro-Lime Slaw, and quick pickled Red Onion relish. Adding a squeeze of fresh Lime I'd say dinner was a success. The challenge was figuring out how exactly to form and cook the tortillas...

Living in California, there are several taco shops out there that specialize in very unique flavor combinations. The trendier ones even add non-traditional ingredients like Kimchi, Corn, and Butternut Squash in their tacos. Of course you know I'll eventually tackle some "fusion" combinations too, but for this, I stuck with something a little more "traditional"... with a California twist.
