This Thai Pumpkin Curry recipe was requested by a viewer and I thought that it would be a great one to make for the blog! This dish brings back memories from when I went to San Francisco with my parents. On a whim we decided to take the Bart up to the city and explore Union Square and do some Holiday shopping. When it came time for lunch we all wanted something different, so we decided to try the food court in the mall. There, my dad went for Thai food and got an amazing Pumpkin Curry that we all tried for the first time. This recipe is inspired by their way of making it (I vaguely remember theirs having green beans and cashews, none of which I had on hand yesterday). BUT you can customize with any veggies you like. I think broccoli would be delightful in this curry as well.
