It was a particularly gloomy morning today so I wanted to eat a warm and comforting breakfast. One of the wedding gifts we received was an amazing belgian waffle maker - quite possibly my favorite gift from the whole registry, save for the touch-less garbage can.
All that aside, I've been attempting to incorporate more whole grains and healthier food choices in our diets since watching stirring documentaries like "Ingredients", "Food Fight", and the recent "Fed Up" (note - these documentaries will shake up the way you look at food). So we've been trying to be more conscious about our food consumption and ingredients. While it would be hard for me to cut everything "unhealthy" out, from here on out I'll be making a conscious effort.
Which brings me to this healthier version of the Belgian Waffles. Super easy and super delicious. It took me about 10 minutes to prepare everything in the morning. I used a blender to mix the batter and I really believe that creates the light and fluffy texture in the waffles.
