Since meeting Nate, I’ve learned the art of “Find Cuisine.” What is Find Cuisine? It’s when you take random things in your pantry and turn it into something creative and delicious. The first few times I had Find Cuisine, I wasn’t sure what to expect. Nate snuck things like Chocolate squares into tomato sauce and called it “mole”… or added mayonnaise in pasta sauce to make it “cream sauce…” Yea. Not exactly appetizing. Lol! I’ve since taken over Find Cuisine in our house and turned it into something less mysterious and well balanced, like this Chicken Tortilla soup!
When I’m short on time, I rely heavily on pantry items to help make good meal. Take this chicken noodle soup for example. Everyone has chicken noodle soup in the pantry but it can sometimes be uninspiring. I like turning my soup into find cuisine by adding in fresh veggies available in the fridge. Sometimes my chicken noodle soup can become a thai coconut chicken soup, or a gourmet fresh herb soup, or like today, a chicken tortilla soup. By adding just a few simple ingredients, I transform a regular box of soup into something semi homemade!

Recipe: Chicken Tortilla Soup
1 box Wickedly Prime Chicken Noodle Soup
½ red bell pepper, diced
1 roma tomato, diced
¼ cup frozen corn
1 tbsp chili powder
1 tsp cumin
In a medium saucepan, heat olive oil and add diced bell pepper. Sautee for a few minutes until bell peppers are soft.
Add tomatoes, chili powder, and cumin and continue cooking for 3-5 minutes until tomatoes are cooked down.
Pour in box of chicken noodle soup and frozen corn. Simmer for 5 minutes and serve.
Garnish with tortilla strips, greek yogurt, and cilantro.
