As the weather warms up I like to make lighter dishes featuring an abundance of seasonal vegetables. Today I’m making a warm Farro Salad with sautéed Asparagus, Peas, and Goat Cheese in a light herbed Lemon Vinaigrette. It’s an explosion of fresh flavors that will burst in every bite. I love Asparagus but the season is so short here in California. It starts in late March and it ends by mid-April. So short!
