It’s another new year and I’m sure many of you have already set your New Year’s goals. For me, I just want to maintain a healthy lifestyle. So to help me do that, I’ll be making a yummy Soba stir fry noodle that contains almost a whole pound of veggies! It’s so quick and easy to make that there’s no excuse for laziness here. This is what I make for dinner all the time when I need something quick. The Soba noodles are perfectly cooked and there’s a crunchy veggie in every bite. And it’s all lightly coated with the sauce and that hint of heat from the Gochujang really comes through. It’s so satisfying.
