Korean Spicy Chicken Sandwich - Honeysuckle

Spicy chicken sandwiches were really having a moment not too long ago, and while i’m sure those fast food versions were really delicious, here’s my slightly different take on the sandwich. I’m making a spicy gochujang buffalo chicken sandwich. That’s like a mouthful to say! But it’s a delicious one at that.

I came up with the idea on a whim - I’ve made buffalo wings sauce before using Frank’s red hot but I wanted to try something new, so enter gochujang - something I always have on hand.

Korean Spicy Chicken Sandwich - Honeysuckle

Spicy Korean Chicken Sandwich:

3 tablespoons gochujang
3 tablespoons soy sauce
3 tablespoons rice vinegar
2 tablespoons honey
4 tablespoons butter
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
2 teaspoons worchesteshire sauce

In a saucepan, add all of the ingredients above. Turn on the heat to medium and stir until the butter has fully melted and the sauce thickens slightly. Turn off heat and set aside.

Chicken sandwich:
2-3 small chicken breasts
hamburger bun
mayo
tomato slices
lettuce
pickles


In 3 bowls, add each of the following separately:
1/2 cup flour + 1 teaspoon salt + fresh crack black pepper
1 egg + 1 tablespoon water
1 cup panko

Dip the chicken in flour, then egg mixed with water, and then in the panko.
Add to a baking rack on a baking sheet and bake at 375 for 10 minutes. Remove and dip into the gochujang buffalo sauce until covered. Transfer back onto rack and bake for another 10 minutes until cooked through.

On a hamburger bun, slather mayo, top with lettuce, chicken, tomatoes, pickles and enjoy! We like it served an ice cold beer. Ahhhh!
