Korean Spicy Cold Noodle Salad

If you’re familiar with the popular Korean rice dish - bibimbap, this is the noodle version, called bibimguksu. It’s the best dish to make on a lazy or hot day where there’s practically no cooking involved. It’s topped with an array of colorful veggies and the spicy sauce will keep you craving for more.

I used green tea soba noodles for this recipe, but you can certainly regular soba noodles here. Those would work just as well! To dress the noodles, i’m making a light yet spicy vinaigrette.

Gochujang Vinaigrette / Sauce

3 tablespoons Korean red chili paste
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons rice vinegar
3 tablespoons sesame oil
2 cloves garlic, minced
1 teaspoon ginger, minced (optional)

In a bowl, mix everything together until the sauce comes together. There is more than enough here to use as a marinade for meat or for 3-4 servings of this salad.

To top the bowl, I used my favorite vegetables - but you can definitely use whatever you have available in the fridge too.

Kimchi
Watermelon radish
Shredded cucumber
Shredded carrots
Shredded purple cabbage
Shredded Green lettuce

Mushrooms, spinach, broccoli, etc. those would all work so well too!

I start by layering my bowl some green lettuce then the soba noodles, vegetables, and finally a hard boiled egg for protein. You can skip the egg altogether or you could sub for tofu or your favorite meat. It’s totally customizable and the sauce really goes with so many things. Enjoy!
