Pineapple Fried Rice

We're making Pineapple Fried Rice in just one wok. And it takes just 15 minutes, it comes together super fast!

2 cups fresh pineapples, cut into

½ inch chunks

½ a bell pepper, diced

1 stalk green onion

2 cloves garlic, minced

1 teaspoon red curry paste

1 cup protein of choice

3 cups day-old rice

1 tablespoon fish sauce

2 teaspoons soy sauce

¼ cup roasted cashews

  1. In a large wok, heat up with a drizzle of oil. Let it get hot and add in the curry paste.

  2. If cooking with chicken, add the chicken cut into small pieces, and stir fry for 4-5 minutes until cooked through.
    If using shrimp, cook for a minute until pink and remove / set aside.
    If cooking shrimp and chicken, then leave in and add the pineapples, bell pepper, garlic, and green onion.

  3. Nestle the shrimp on top of the veggies to slow down the cooking process. Once the pineapple starts to caramelize for (about 3 minutes), add the cold rice and break it up a bit.

  4. Add the fish sauce and soy sauce, the cashews, mix well and serve.
