Creamy Miso Buttered Noodles

Miso Buttered Noodles : a 20 minute meal that’s perfect for those busy weeknights when you need dinner, fast!! I used everything I already had in the pantry, and you could mix and match this with so many different veggies, protein, or noodles. Find cuisine as we like to call it around here. My fam loved it! 1 lb chicken thigh, sliced
2 tbsps butter
2 cups sliced mushrooms
4 cloves garlic, minced
1 shallot, minced
1 tbsp ginger, minced
ramen or your favorite noodles
1 bunch baby bok choy
½ cup chicken broth
½ cup heavy cream (or non dairy milk)

Miso Soy Marinade:
2 tbsps yellow miso
2 tbsps soy sauce
1 tbsp honey
2 tsps rice vinegar
2 tsps sesame oil

  1. In a bowl, mix together the marinade ingredients and set aside.

  2. In a large pan, melt the butter on med high heat. Cook the chicken with 2 tbsps of the miso soy marinade until golden brown.

  3. Add the garlic, shallot, ginger and cook for a few more minutes until fragrant. Add mushrooms, marinade, chicken broth, and heavy cream.

  4. Let it simmer for 5 minutes on med low heat until slightly thickened. Add in the cooked noodles, bok choy, stir, and enjoy! I garnished with green onions and black sesame seeds. Enjoy!
