Turkey Stroganoff

Save this Turkey Stroganoff recipe when you only have 20 minutes to get dinner ready. It’s warm and hearty weeknight meal that’s perfect as the weather starts to drop. I chopped up the mushrooms real small cause my kids won’t eat it if they’re the bigger slices. They shrink down to nothing when chopped and the kids are none the wiser. 🙃

1 yellow onion, chopped
1 cup mushrooms, chopped
3 cloves garlic, minced
1 lb ground turkey
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp ground pepper
1 tsp kosher salt
2 tsps worscheshire sauce
2 cups chicken broth
1/2 cup sour cream
Spinach
8 oz cooked egg noodles

  1. In a large pan, saute the onion until golden brown. add ground turkey, smoked paprika, thyme, black pepper, and salt.

  2. Cook and mince the meat for 5 minutes and then add the mushroom, garlic, Worcestershire sauce. Let it cook for another two minutes to brown, and then add 2 tbsps of ap flour, mix well, then add chicken broth.

  3. Simmer for another 5 minutes until flavors are able to meld and sauce thickens, then stir in the sour cream. Add the egg noodles, spinach, and stir milk if you want the sauce to be creamier. Enjoy!
