Asian Smashed Cucumber Salad

This Asian Smashed Cucumber Salad is so refreshing and tasty. The cucumber has the perfect crunch and it soaks in all the flavors of the sauce. These have a nice sour crunch to complement my Creamy, Peanutty Noodles!

3 Persian cucumbers

Cucumber Sauce
2 tbsp rice vinegar
2 tsp sugar
2 tsp soy sauce
½ tsp salt
2 tsp sesame oil
2 cloves minced garlic

  1. Cut cucumbers into 2-inch pieces, then smash with the side of your knife.

  2. Place them into a strainer and toss in some salt and sugar. We’re removing the excess moisture from them so they’re nice and crunchy. Let sit for a few minutes then rinse and drain.

  3. To a bowl, add in all the cucumber sauce ingreidents, and mix. Add cucumbers in. Let them sit for 15 minutes to soak.
