Chinese Chicken Salad

This Chinese Chicken Salad is so good, even Kim K would approve.

1 cup Napa cabbage
1 cup romaine lettuce
½ cup sliced cucumbers
¼ cup shredded carrots
¾ cup grilled chicken
2 tbsps green onion, chopped
1 tbsp cilantro, chopped
1 tbsp sliced pickled ginger
1 mandarin orange, peeled

Sesame Soy Ginger Dressing
2 tbsps tahini
2 tbsps sesame oil
2 tbsps rice vinegar
2 tbsps water (more if needed)
1 tbsp soy sauce
1 tsp salt
1 tbsp maple syrup
2 tsp ginger
1 clove garlic

  1. In a blender, add all the ingredients for the dressing and blend until smooth. If you want it thinner, add another tbsp of water.

  2. To make the crispy noodles, add small pieces of rice noodles to hot oil and let it puff up. Add to salad.

  3. Enjoy!
